While baking can be fun (for some), it does usually leave quite a mess. Between mixers and bowls and flour all over the kitchen, sometimes it just isn’t worth it – until now.
Grant Melton is our baking whiz here at Rachael Ray, and he makes dessert in a skillet! Yep, that’s all you need – just a skillet (and possibly one bowl, depending on the recipe) for ooey gooey perfection. Here they are, all in one place just for you to swoon and drool over.

Grant’s Orange & Olive Oil Upside-Down Skillet Cake
This is like a winter version of an upside down cake. Thin slices of orange are coated in sugar and caramelized in a skillet with melted butter. The best part about this recipe is, you get to set it on fire! “Anything you can set on fire intentionally in a kitchen is really fun,” jokes Grant. He then pours the olive oil cake batter right over the top, pops it in the oven, and there you have it. A gorgeous golden orange and olive oil upside down cake.
Grant’s Skillet Monster Cookie
Monster cookies are basically cookies with anything and everything you can dream of in it. This happens to be a giant peanut butter cookie with chocolate candies, chocolate chips, peanut butter chips, pecans (or any nuts you like), and raisins. Yum!
Pie on the Fly
Trust us -- this is the easiest pie you’ll ever make (and it tastes soooo good!). Instead of fussing around with homemade pie dough (or any sticky dough) Grant uses good old store-bought puff pastry. Just toss all of the filling ingredients together in the skillet, top with the puff pastry, throw it in the oven and you’re done!
3-Ingredient S’mores Dip
What do when you really want s’mores but don’t have a campfire? Make them in a skillet. Don’t hate, but these just might be better than the classic ones roasted over the fire. But, you can be the judge of that -- give ‘em a try!
Skillet Banana Cake
Yes, you CAN make an entire cake in a skillet, and it’s easy, too!. Just melt butter, add in sugar and the bananas and let them caramelize. Mix in the rest of the ingredients, pop it in the oven and frost once it's done. You’re just minutes away from banana cake nirvana.
Skillet PB&J Cookie
It’s going to be tough to fight those feelings of nostalgia once you take a bite into this gigantic cookie. It’s warm, gooey, has a swirl of jelly running through it (in your favorite flavor, of course), and the peanuts give it a bit of crunch.
Oatmeal-Fennel-Raisin Skillet Cookie
Rach says this one happens to be one of her favorites because there’s fennel in it! This sweet and savory cookie will have you hooked after just one bite -- the plump raisins and drizzle of honey give it a bit of sweetness, while the fennel and cloves balance the flavors.
Skillet Hot Fudge Cake
The next time you have a craving for a hot, gooey, chocolate molten cake, look no further. The coffee helps deepen the chocolatey flavor for extra decadence. Serve it piping hot straight from the skillet with a scoop (or two… or three) of velvety vanilla ice cream. (BRB going to make this NOW.)

This skillet masterpiece could serve as a great brunch option or dessert. Then again, what rulebook says you can’t have dessert for brunch anyway? It’s wonderfully sticky, gooey, crunchy and satisfying -- it takes some time to make, but the end result is so worth it!
