This easy, kid-friendly recipe for Mexican-style rice uses pantry staples: brown rice, canned chickpeas and salsa.

Ingredients

  • 1 box brown rice
  • Extra-virgin olive oil (EVOO)
  • ½ cup salsa
  • 1 can chickpeas, drained
  • A handful of cilantro, chopped

Yield

Serves: 4-6

Preparation

Prepare rice to package directions.

Place a few tablespoons of EVOO in a large pan over medium-high heat. Add in chickpeas and sauté. Add in salsa to warm through. Toss in rice and stir well.

Garnish with cilantro and serve.
