You can use frozen fruit instead of fresh — but not canned! Just thaw before pureeing.

Ingredients

For the raspberry-lime concentrate
  • 2 cups raspberries
  • 1/2 cup fresh lime juice, from 4 limes
  • 2 tablespoons honey or maple syrup
For the orange-blackberry concentrate
  • 2 cups blackberries, blueberries or raspberries
  • 1 cup fresh orange juice, from 2 to 4 oranges
For serving
  • Sparkling water

Yield

Serves: 4 to 6

Preparation

For each concentrate, blend ingredients until smooth. Using a fine-mesh strainer, strain puree to remove any seeds or pulp. Refrigerate puree in an airtight container up to 1 week. When ready to use, combine with sparkling water to achieve desired sweetness and to give your soda plenty of “pop.”
