Alvin Cailan, host of First We Feast's "The Burger Show," shows his ingenious trick of melting the cheese first for a crispy cheeseburger game-changer. The technique is similar to the ones Rach uses for her Frico Eggs.

Ingredients

  • Four 4-ounce balls ground beef chuck
  • 4 seeded hamburger buns
  • Store-bought Russian dressing
  • Chopped red onion
  • 1 ⅓ cups shredded cheddar cheese
  • 8 slices bread and butter pickles

Serves: 4

Preparation

In a griddle over high heat, smash each ball of ground beef to flatten into a patty. 

Divide the shredded cheddar into 4 piles, about ⅓ cup each, directly on the hot griddle. Set patty seared-side down onto melted cheddar. Flip melted cheddar and patty onto uncooked side. 

Toast buns. On the bottom bun, top with dressing, onions and 2 pickle slices each. Add cooked patty and crispy cheese to bottom bun, smear dressing on top bun and set into place.
